ANNEX 2

Induction Programme for Prisoners Employed in the Kitchen

1. List of names supplied by Labour Allocation Supervisor.

2. Prisoners selected from waiting list in strict rotational order.

3. Medical screening arranged.

4. Prisoner interviewed by a member of the Catering staff which includes general information about work in the kitchen, what is expected of prisoners working there and details of basic job description.

5. If selected, prisoner is then supplied with written job description and a health and safety statement which he is required to sign.

6. A file is opened for each prisoner which contains his job description, medical screening form and training records.

7. Prisoner attends a three-hour elementary food hygiene course which is provided by a member of the Catering staff. This course is supported by a video, a flip-chart presentation and several handouts.

8. Training specific to the task on which he is to be employed is then given to the prisoner, backed up by regular on-the-job training.
