3. Agricultural Output

Figure 1 shows the importance of the Scottish livestock sector, contributing 53% of Scotland's agricultural output which was estimated to be worth £1.916 billion in 2006. Nearly a third of all agricultural output comes from finished cattle, sheep and pigs. Finished cattle generated £406 million, finished sheep £135 million and finished pigs £57 million in 2006 with dairy products generating an additional £245 million. The importance of beef and dairy cattle to Scottish farming is further highlighted in Figure 2 which highlights the output from each species of livestock. It shows in 2006 the Scottish beef and dairy sectors (including dairy products) contributed £700 million (36 per cent) to Scotland's agricultural output with a further £147 million (8%) coming directly from the sheep sector and £57 million (3 per cent) from the pig sector.
